Steamed Sand Flower

Along the southern coast of Java in Indonesia, a plant bearing delicate pink flowers thrives. In the local language, this flowering plant is known as “kembang pasir,” or bay bean. Kembang pasir shares similarities with common vegetables, boasting a subtle sweetness and a neutral fragrance. Its abundant fiber content and ready availability have made it a staple in the local diet. It is often enjoyed as a key ingredient in salads or prepared through stir-frying and steaming techniques.
Ingredients:
- Flower of bay bean (Kembang pasir) (Canavalia rosea), 300 grams
- Tofu, 200 grams
- Shrimp, peeled, 100 grams
- Chicken eggs, 4 pieces
- Garlic, 4 cloves
- Onion, 4 stalks
- Bay leaves, 6 pieces
- Lemongrass, 6 stalks
- Basil (to taste)
- Salt, 1 teaspoon
- Pepper, 1 teaspoon
Instructions:
- Wash all ingredients with water.
- Put water in a pan and bring to a boil. Add the kembang pasir and boil until wilted.
- Take out the kembang pasir and drain the water.
- For the seasoning, grind the garlic, salt, and pepper they turn into a paste.
- Crush the tofu into small bits.
- In a container, add mix the tofu, spices, shrimp, and kembang pasir.
- Add the eggs and stir thoroughly.
- Get some of the raw dish and wrap it with cut banana leaves.
- Add lemon grass, bay leaves, and basil for aroma. Steam for 30 minutes over medium heat. Serve and enjoy!
