Pork with Fermented Shrimp Paste (Gia Vien)

Hailing from Ninh Binh province, Vietnam, this dish is a quintessential part of the region’s culinary heritage. Its star ingredient is the locally renowned fermented shrimp paste, a beloved product of the area. For the optimal dining experience, it pairs wonderfully with steamed rice or a selection of fresh vegetables.

Ingredients:

  • Pork meat (Choose the pork shoulder lean so that the meat has both lean and fat)
  • Lemongrass, ginger, shallot
  • Cooking oil
  • Salt
  • Seasoning powder
  • Ground pepper

Instructions:

  1. Salt and grind the meat.
  2. Thinly slice the shallot, lemongrass, and ginger.
  3. Stir-fry sliced shallots, lemongrass, and ginger until they turn crispy and fragrant
  4. Add the ground meat and stir until the meat is cooked evenly.
  5. Spice up with shrimp paste and stir well. Simmer the meat shrimp paste for 5 minutes,
  6. Add the seasoning powder and stir well.
  7. Turn off the heat and sprinkle a bit of ground pepper. The dish is ready to be served.
