Rare Goat Meat with Lime

Goat meat, known for its leanness, low fat, and cholesterol content while being rich in protein, stands as a wholesome choice for enthusiasts of meat. It frequently undergoes flavor-enhancing culinary transformations with the addition of aromatic spices and herbs. Goat meat lends itself to diverse cooking methods, ranging from grilling and roasting to stewing and currying.
In this captivating culinary demonstration, Nguyen Gia Hai showcases the art of preparing a distinctive Vietnamese delicacy. This dish combines the rarity of goat meat with a symphony of indigenous plants, fruits, herbs, and spices, resulting in a culinary masterpiece.
Ingredients:
- Goat meat
- Galangal
- Garlic
- Ginger
- Lemongrass
- Chili
- Lime leaves
- Lime juice
- Roasted sesame seeds
- Starfruit
- Fresh figs and some indigenous vegetables
- Rice paper
- Young banana fruits
- Spices: Seasoning powder, salt, pepper, fish sauce, sugar)
Instructions:
- Wash the goat meat thoroughly.
- Marinate the meat in galangal, garlic, ginger, and lemongrass to eliminate its smell.
- Steam the marinated goat meat, and then let it cool.
- Peel the galangal and smash the ginger and cut it into strips.
- Slice the lemongrass, and lime leaves, and chop the vegetables.
- Peel the young banana fruits and slice them into thin pieces.
- Mix the goat meat with lemongrass, ginger, seasoning powder, salt, pepper, and rice wine and marinate for 15 minutes, then add some aromatic herbs layer on top, and steam until cooked.
- Slice the steamed goat meat, then add lemongrass, ginger, garlic, chili, lemon juice, sugar, fish sauce, and pepper and squeeze altogether so the meat absorbs the spices. Then add lemongrass, ginger, galangal, aromatic herbs, chili, and sesame seeds and sprinkle with roasted sesame seeds and ground pepper.
- Transfer the dish to a plate. This dish can be served with green vegetables and rice paper.
