Breadfruit French Toast

Consuming locally sourced fruits not only promotes good health but also provides essential support to local farmers. In crafting this delightful and innovative treat, Andrea Sunna and Lose Fahina utilized fresh fruits and indigenous food products that have been cultivated, processed, and packaged in Tonga.

Ingredients:

  • Cassava flour
  • Breadfruit, cut in wedges, boiled
  • Starfruit
  • Lemongrass
  • Hibiscus flower
  • Moringa powder
  • Dragon fruit
  • Dried pineapple
  • Meyer lemon
  •  Vanilla

Instructions:

Making the coconut and breadfruit ice cream

  1. Put in a pan the following ingredients: 2 cups of fresh coconut milk, lemongrass, and vanilla, and then mix all together.
  2. Add ½ cup of raw sugar. Mix with the other ingredients.
  3. After a while, remove the lemongrass.
  4. Put ¾ cup of Nishi cassava flour and 1 cup of fresh coconut milk in another bowl. Mix until smooth. Add this mixture to the first concoction.
  5. Add 1 cup of boiled mashed breadfruit to the pan. Mix until it thickens.
  6. When the mixture is thick, transfer it into an ice cream maker or a cold bowl with ice
  7. When the mixture has cooled down, transfer it to a bowl and put it into a freezer until it turns firm.

Making the starfruit compote

  1. In a pan, put 2 cups of fresh-cut starfruit, 1 cup of fresh lemon juice, 1 cup of raw sugar, and fresh hibiscus flowers (cut).
  2. Mix them all together and let the mixture boil.

Making the caramelized peanuts

  1. In a pan, toast 1 cup of fresh peanuts.
  2. Add ½ teaspoon of salt.
  3. Add ¼ cup of raw sugar. Mix until the sugar is dissolved and stuck to the peanuts.

Making the breadfruit French toast

  1. Coat the pre-boiled breadfruit in cassava flour.
  2. Put 1 cup of cassava flour and 2 tablespoons of raw sugar in a bowl and mix.
  3. Add cinnamon, ½ teaspoon of salt, and 1 cup of fresh coconut milk. Mix all together until smooth.
  4. Dip the coated breadfruit in the cassava-cinnamon batter and coat it in freshly grated coconut. Then pan fry the coated breadfruit.
  5. After frying, put it on a plate, add the other compote for garnishing and add cut dragonfruit for decoration.
