Dory Fish Salad

Dory fish, recognized for their firm and mild-flavored white flesh, offer a low-fat culinary canvas that can be prepared in various delightful ways, such as grilling, baking, or frying. In this demonstration, Farmer Pham Hong Quang shares a tantalizing recipe showcasing fresh dory fish and locally sourced ingredients, crafting a delicious salad.

Ingredients:

  • Dory fish, pork belly
  • Grilled rice powder
  • Galangal, shallot, garlic, chili
  • Lime leaves and lime juice
  • Sour Vietnamese fermented rice
  • Shrimp paste
  • Cooking oil
  • Spices (Salt, sugar, seasoning powder, broth mix, pepper)
  • Aromatic herbs: Ming aralia leaves, fig leaves, fish mint, and other indigenous vegetables

Instructions:

Preparing the fish

  1. Clean the dory fish. Skin the fish and slice the fish meat.
  2. Pound the galangal, and slice the chili, shallots, and lemongrass.
  3. Marinate the sliced fish with galangal and lime juice for 20 minutes, then remove the juice and spice up with salt, pepper, grilled galangal, and grilled rice powder.

Making the salad sauce

  1. Puree the fishbone and pork belly.
  2. Add broth mix, shrimp paste, sugar, sliced chili, minced galangal, seasoning powder, and rice flour, and mix well.
  3. Fry the sliced shallots for 2 to 3 minutes until crispy.
  4. Decorate the fish with crispy shallots. The fish salad has an attractive color and a distinct aroma. The soft and juicy fish is served with sauce with a naturally rich taste.
