Meatball Noodle Soup

Meatball noodle soup holds a cherished place among the offerings of Vietnamese restaurants and street vendors, captivating the hearts and taste buds of many. Beyond its comforting appeal, this dish embodies the unique flavors of Vietnamese cuisine, highlighting the use of locally sourced ingredients, including vegetables and herbs. In this video, the dedicated members of the Kim Son District Farmers’ Association demonstrate the complete step-by-step process of crafting a mouthwatering meatball noodle soup.

Ingredients:

  • Pork bone (for the soup)
  • Pork meat and lard (for the meatball)
  • Rice noodles
  • Grilled shallots
  • Grilled ginger
  • Fried sliced shallots
  • Aromatic herbs including chives, coriander, parsley
  • Green vegetables: young banana tree, salad, banana flower, bean sprouts, Vietnamese balm
  • Spices: Fish sauce, salt, seasoning powder, sugar
  • Lemon
  • Chili
  • Pepper

Instructions:

Cooking the soup

  1. Wash the bones, cut them lengthwise, and boil them until the water is clear, then stew for 8-10 hours.
  2. Spice up with salt, sugar, ginger, and grilled shallot.

Making the meatballs

  1. Grill the meat first then add the lard. Spice up with fish sauce and seasoning powder.
  2. Squeeze the meatballs from the grilled meat and boil the fresh meatball on medium heat for 3 to 5 minutes until they float to the surface.
  3. Pick up the meatballs and soak them in cold water for 5 minutes to get a good color.

Making the meatball noodle soup

  1. Boil the rice noodle to make them soft and hot, then put them in a bowl.
  2. Add the meatball and aromatic herbs and fried shallots.
  3. Pour the broth into the bowl and add some green vegetables, chili vinegar, or chili and lime juice to taste.
